We are a family-owned business dedicated to producing high-quality extra virgin olive oil. Our olives are grown in a small village Nova Vas, next to Poreč in region Istria, where tradition meets modern production methods and ecological approach.

Villanova Blend
Villanova Blend olive oil is celebrated for its well-balanced and versatile flavor profile. It features a smooth, fruity taste complemented by a gentle bitterness and a subtle peppery finish. This harmonious blend makes it ideal for a wide range of culinary uses. The exact flavor may vary slightly depending on the olive varieties in the blend and the timing of the harvest, adding to its unique character.
Istarska Bjelica – Robust and Iconic
An Istrian classic known for its resilience and late harvest, Istarska Bjelica produces oval-shaped fruit with high polyphenol content. Its oil is intense and peppery, with green almond, wild herbs, and artichoke on the nose. A true powerhouse of antioxidant richness and structure.
Ideal for bold palates – perfectly complements roast meats, aged cheese, radicchio salads, and even truffle dishes.
Leccino – Smooth and Approachable
An Italian variety that thrives in Istrian soil, Leccino produces smooth, round fruit and a balanced oil with mild pepper and ripe olive notes. Soft, versatile, and universally loved.
Excellent for everyday use, especially on white fish, green salads, steamed vegetables, and homemade bread.
Buža – Soft Elegance in Every Drop
With its generous canopy and beautifully colored, large fruit, Buža yields a versatile and aromatic oil. Depending on the harvest time, it expresses grassy green apple notes or soft, sweet fruitiness.
Pairs beautifully with creamy soups, grilled chicken, mild cheeses, fish carpaccio, and roasted root vegetables.
Puntoža – Subtle, Yet Memorable
This rare Istrian variety produces round, medium-sized olives and an oil that’s gently aromatic and persistently fruity. A charming option for those who enjoy balanced, medium-intensity oils.
Best enjoyed with risottos, steamed fish, vegetable pasta, or a warm goat cheese salad.
Porečka Rošulja – Aromatic and Distinct
A native cultivar from the Poreč region, this tree gives fruit with deep purple skin and a rich herbal scent. The oil is fragrant, with delicate bitterness and a light spiciness that lingers.
Enhances dishes like roasted zucchini, mushrooms, baked feta, or Mediterranean-spiced legumes.
Pendolino – Light and Bright
Often chosen as a pollinator, Pendolino earns its place through the light, fruity oil it produces. With gentle bitterness and a subtle spice, it adds finesse to blends and stands well on its own.
Adds elegance to steamed greens, poached eggs, spring soups, or delicate creamy sauces.
Črnica – A Heritage Cultivar with Depth
Named after its dark, almost black ripe fruit, Črnica is a traditional northern Istrian variety. Its oil is full-bodied, balanced, and smooth, with notes of almond, apple, and ripe olive pulp.

Extra Virgin Olive Oil and Its Quality
Extra virgin olive oil is the highest quality grade of olive oil, made from pure, cold-pressed olives without the use of chemicals or heat. It boasts a fresh, fruity aroma and a rich flavor, often with notes of grass, herbs, or pepper. To qualify as extra virgin, the oil must have low acidity (below 0.8%) and pass strict taste and chemical standards. Carefully selected at peak ripeness, the hand-picked olives ensure a fresh, vibrant taste — often with notes of green grass, herbs, almonds, and a touch of pepper. With low acidity (under 0.8%) and high levels of antioxidants and healthy fats, EVOO is both a gourmet ingredient and a health ally.
How It Works

Hand Harvesting
Ripe olives are carefully hand-picked to avoid bruising and ensure the highest quality.

Cleaning & Grinding
Olives are washed and then crushed into a paste, including the pits, to release the natural oils.

Cold Pressing
The paste is slowly pressed at low temperatures (below 27°C / 80°F) to extract pure, unrefined oil while preserving flavor and nutrients.
4.
Separation & Bottling
The oil is separated from water and solids, then filtered and bottled — ready to enjoy, fresh and full of aroma.
